Asian Inspired Salmon and Veggies

Another incredibly simple yet scrumptious meal that is uber healthy without sacrificing taste. Fish is one of my favourite proteins to cook, however it can get boring after eating it 2-3 times a week, that's why I was super excited when I found this Asian Inspired Sauce on Pinterest. And even better this Sauce would be great with other proteins such as chicken, beef, and even tofu (for all you vegetarians out there). So what's for dinner tonight... I think I just made that decision that much easier for you. Ingredients and Directions below:
Ingredients:
1. Salmon
2. Broccoli
3. Red Onion
4. Mushrooms
5. Sesame Seeds (Optional Garnish)
Sauce:
1. Soy Sauce - 1 Tbsp
2. Rice Wine Vinegar - 1 1/2 Tbsp
3. Sriracha Sauce - 1 Tbsp
4. Honey - 1 Tbsp
5. Sesame Oil - 1 Tsp
6. Crushed Red Pepper - 1/4 Tsp

Directions:
1. Pre-heat oven to 450 degrees.
2. Mix together Sauce Ingredients (using half for Salmon and half for Veggies).
3. In a large frying pan on medium-high heat start to cook Broccoli and Red Onion.
4. Once oven has heated place Salmon in and cook for 12-15 minutes.
5. Once Broccoli and Red Onion are tender mix in Mushrooms and Sauce cooking for approximately another 5 minutes, until Mushrooms have slightly browned.
6. Remove Salmon from oven and let cool for a couple of minutes while Veggies finish cooking.
7. Plate Salmon on top of Veggies and sprinkle with Sesame Seeds and more Sriracha (Optional).
8. ENJOY :)
